Chicken Breast & Apple Normandy - Chef Remy Cooks!
The smell of apple cider and hot peppers filled home. This is a simple dish and is well remembered. You can substitute chicken breasts, thighs and drumsticks. You probably want to add the mushrooms. I have seen this done with leeks, but decided to just keep things simple. Ingredients: 4 chicken breast half 2 Granny Smith apples, chunked 1 small onion, quartered 2 large red bell pepper, diced 1 cup apple juice or cider ¼ cup apple cider vinegar ½ teaspoon1 tablespoon of salt. 2 tablespoons seasoned flour. Sour cream Method: In a medium saucepot over medium heat until boiling apple juice, vinegar, apple pieces, peppers, onion, salt, and lead. Reduce heat and simmer for 10-15 minutes or until vegetables are softened. Set aside. Dredge chicken in flour or meal that you have seasoned with salt and pepper. In a large saucepan with lid, over medium heat, add olive oil and butter. Cook chicken until browned on both sides(about 5 minutes per side). Add apple mixture to the pan and bring to a boil. Reduce heat to simmer, cover, and continue simmering until chicken is done. To serve, place chicken in a large bowl, add two tablespoons sour cream to the liquid in the pan, stirring, then pour the apple mixture over the chicken in the bowl. Serve hot from the large bowl.
